BRIANNA'S BEETROOT DIP

INGREDIENTS:

2 beetroot

1 cup natural skim milk yoghurt

2 cloves crushed garlic

1/2 teaspoon ground cumin

Juice of 1/2 lemon

 

DIRECTIONS:

Place beetroot in a saucepan & cover with water.

Bring to the boil & simmer until beetroot is soft (approx. 45 minutes).

Drain, let cool then peel.

Place beetroot, garlic, cumin & lemon juice in a food processor & process until smooth & thick. 

Stir yoghurt in by hand.

You can make a pattern with the yoghurt by not mixing it completely through.

Serve with crusty bread, pita chips etc.
