BRIDGET'S BEETROOT PICKLE

INGREDIENTS:

1 kilo beetroot

2 cups sugar

1 cup water

1 star anise

1 litre (4 cups) white vinegar

3 small red dried chillies

6 black peppercorns

 

DIRECTIONS: 

Wash the beetroot & cut off the leafy tops without breaking the skin.

Add the beetroot to a large pot of boiling water & simmer, covered for about 1 hour or until the skins are removed easily.

Cool the beetroot.

Cut in half or quarters or slice & pack into sterilized jars. 

Combine the sugar, vinegar, water, chillies, star anise & peppercorns in a pot & stir over a medium heat, without boiling until the sugar is dissolved (You can add salt if you wish).

Cool the strain over the beetroot to cover completely & seal.

This is best left for a couple of weeks before eating.
