OLIVIA'S ONION SOUP

INGREDIENTS:

 
   

60 grams Butter

2 large Onions

3 Leeks                                                          

4 Spring Onions

5 cups stock (chicken or vege)

1 bunch Chives                                             

Cream (optional)

Salt

freshly ground Pepper                                 

freshly ground nutmeg

 

DIRECTIONS:

Melt butter.

Finely slice leeks, onions & spring onions & add to pot.

Saute until softened.

Add stock.

Cover & cook slowly for 30 minutes.

Add chopped chives, salt, pepper & nutmeg to taste.

Ladle into bowls with an optional dash of cream on top.
