FLO'S BANANA CAKE

INGREDIENTS:
1/4 lb butter (125 grams)
2 Large ripe bananas
1 cup sugar
1 egg
1 1/2 teaspoon Baking Powder
1 teaspoon Baking Soda
1 1/2 cups Flour
2 Tablespoons Milk
Pinch salt

DIRECTIONS:
Cream butter & sugar,

Then add beaten egg, followed by the mashed bananas.

Add flour & Baking Powder & mix until just combined.

Mix Baking soda & Milk in a cup & pour into the cake mix. 

Lastly add Salt & mix until just combined.

Put into a 200mm round greased, cake tin.

Bake 35min at 350*F/ 180*C
or until a skewer can be inserted & come out clean.

 


Notes:

~ if doubling recipe use 6 bananas.

~ An easy way to mash the bananas is to put them on a plate & squash them down using a fork.

~The salt will bring out the sweetness of the bananas, but can be ommitted.

~Brown sugar can also be used to sweeten the cake, use 1/2 cup Brown & 1/2 cup white sugar.

~Mixing the Baking Soda into the milk before adding to the cake will prevent clumps of Soda forming in the cake.

~This same recipe can be used to make Banana muffins- cook 10-15 min depending on the sizes


Icing:
Any icing can be used but lemon icing is preferable.

Simply mix the juice of 1/2 a lemon and 1 1/2 cup sifted icing sugar together with a 1Tbsp soft butter.

Adding water if needed.
