ALI'S CARROT CAKE

INGREDIENTS:


Cake:
4 eggs
2 teaspoon Baking Powder
2 cups sugar
1 cup pecans, chopped (or walnuts)
4 cups grated carrots
1 cup vegetable oil
2 cups flour
2 teaspoon Baking soda
2 teaspoon Cinnamon.

Cream Cheese Frosting:
1/2 stick butter, softened (56.7 grams)
8oz cream cheese, softened (225g/225ml)
16oz icing sugar (500 grams)
2 teaspoons vanilla extract

DIRECTIONS:

Carrot cake:


Combine sugar, baking powder, flour, cinnamon & baking soda in a bowl.

Add in the eggs & oil.

Mix until just blended, then add the carrots & pecans (walnuts).

Bake at 190*C-200*C for 35-40 min, or until a skewer can be inserted & comes out clean.

Frosting directions:
Mix cream cheese & butter until smooth, add sugar & vanilla & blend well.

Spread on cooled cake.
