CHRISSIE'S PAVLOVA WITH STRAWBERRIES

Serves 6
 

INGREDIENTS:
4 egg whites, at room temperature
300 grams caster sugar
2 teaspoons white vinegar, or lemon
2 teaspoons vanilla extract
2 Tablespoons water
200 grams chip of ripe strawberries, hulled & thickly sliced
1/4 cup icing sugar

DIRECTIONS:
Heat oven to 150*C.

Whisk the egg whites until they form soft peaks.

gradually whisk in sugar a little at a time.

Add the vinegar, vanilla & water & fold through. 

Spoon on to a sheet of non-stick baking paper. P

lace in the oven & cook for 1 hour.

Turn the oven off then leave the door slightly ajar with the aid of a teaspoon.

When the Pavlova has cooled, peel the paper off of the pavlova & store in a large airtight container.

To serve, whip cream until stiff peaks form; spoon on top of pavlova.

Scatter over strawberries.

Dust generously with icing sugar.

The classic pavlova can be made in advance & stores in the freezer or in an airtight container.
