ALI'S BLACK FOREST CAKE
Makes a 9 inch, 3 layer cake.
INGREDIENTS:
2 1/8 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
3/4 teaspoon baking soda
3 eggs
1 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups cherries or fresh strawberries, berries, plums. Sliced or chopped.
cream (whipping cream)
Two identically sized cake tins.
Chocolate buttons &/or extra fresh fruit for decorating top of cake.
DIRECTIONS:
Preheat oven 175*C
Grease & flour two 9 inch, round, cake pans; cover bottoms with baking paper.
In a large bowl, combine flour, 2 cups sugar, cocoa, baking powder, baking soda & salt.
Add eggs, milk, oil & vanilla extract; beat until well blended.
Pour into prepared pans.
Bake for 35mins, or until a wooden toothpick inserted in centers comes out clean.
Cool layers in pans, on wire racks (10min)
Loosen edges, & remove to racks to cool completely.
Use a knife to cut each cake in half (horizontally).
Use the whipped cream & fruit in between each layer.
Notes:
cherries/ strawberries/ berries/ sliced plums could be stewed beforehand if wanted, rather than using raw fruits.
Usually only use three layers. -Two bottom halves & one top half.
If wanted, the spare top half can be used by making it into crums & sticking it to the outside of the cake (sides), by using whipped cream as the 'glue'
Decorate top of the cake with piped whipped cream, chocolate buttons & fresh fruit.
