ALI'S CHICKEN, CAVOLO NERO & GINGER STIR FRY

INGREDIENTS:
200 grams Cavolo nero, shredded
1 Tablespoon oil
500 grams chicken breast, sliced
2cm piece of root ginger, grated
1 carrot, cut into matchsticks (120g)
1 red pepper, sliced (180g)
2 Tablespoons Hoisin sauce
2 Tablespoons Soy sauce

DIRECTIONS:
Cook the Cavolo Nero in boiling water for 5 min then drain.

Meanwhile, heat the oil in a large frying pan or wok & fry the chicken for 5 min.

Add the ginger, carrot & pepper & fry for 3 mins.

Add the Cavolo Nero, hoisin & soy sauce with 2 Tbsp water & stir fry for 2-3mins or until the chicken is thoroughly cooked.

Serve with freshly cooked noodles.
