ALI'S KALE RISOTTO WITH PARMESAN

Serves 4
Preparation time: 10 min
Cooking time: 30-35min
INGREDIENTS:
1 Tablespoon oil
1 onion, chopped
350 grams risotto rice
4 Tablespoons white wine
1 litre chicken or vegetable stock
200 grams shredded Cavolo Nero
50 grams Parmesan cheese, grated
DIRECTIONS:
Heat the oil in a large frying pan & fry the onion for 2-3mins.
Add the rice & fry for 1 min.
Add the wine & reduce by half.
Gradually add the stock a little at a time until the rice is tender & the liquid has been absorbed, which will take about 20-25min.
Meanwhile, steam the Cavolo Nero for 5min & add to the risotto with the parmesan.
Stir well & serve with roasted chicken.
