BETH'S BRUSSEL SPROUTS WITH CRISPY BACON & WALNUTS

Serves 4 as a side

INGREDIENTS:
4 rashers bacon, cut in thin strips
1 teaspoon oil
200 grams Brussel Sprouts
1 cup cooked couscous
1/2 cup toasted Walnuts
Zest and juice of 1/2 Lemon
1/4 cup parsley, roughly chopped

DIRECTIONS:
In a frying pan heat oil & cook bacon until crispy.

Drain on paper towel.

Fill a medium-sized pot with water & bring to the boil.

Cook brussel sprouts for 4 minutes until just cooked.

Drain & place in a large bowl.

Add bacon, couscous, walnuts, zest, juice & parsley to sprouts & toss.

Serve warm on a platter.
