LUCY'S AVOCADO MACARONI & CHEESE BAKE

INGREDIENTS:
 
1 avocado, diced
300 grams macaroni noodles
1 egg
¼ cup reduced fat cream
1 cup grated low fat cheddar cheese
 
 
DIRECTIONS:
 
Cook 300 grams macaroni noodles in boiling water for 10–12 minutes.
 
Drain well & put into a large bowl.
 
Beat 1 egg, ¼ cup reduced fat cream & add to the pasta.
 
Stir through 1 cup grated low fat cheddar cheese & 1 diced avocado.
 
Spoon into baking dish.
 
Cook in 180ºC oven for 25–30 minutes, until golden.
