VANESSA'S WARM CABBAGE & BACON SALAD

INGREDIENTS:

Olive oil

½ Savoy cabbage (or regular), roughly chopped

1 onion, diced

4 cloves garlic, finely chopped

Salt & pepper to taste

2 Tablespoons wholegrain mustard

1 cup chopped bacon or ham

½ fresh lemon or lime for garnish & a bit of zest

 

DIRECTIONS:

Heat a little olive oil in a large pan or wok. 

Add the garlic & onions & sauté until soft. 

Add the cabbage & stir fry until wilted. 

Add salt, pepper & mustard & stir through, then transfer to a serving dish.

 

Using the same pan, add a little olive oil & quickly cook the bacon or ham until crispy. 

Toss through the cabbage, then place back in serving dish.

 

Garnish with half a lemon per person.
