ANGELA'S ALMOST RAW SALAD

INGREDIENTS:
 2 cups grated carrot
 3 cups grated beetroot
 ¼ cup chopped parsley
 ½ cup cooked lentils
 ½ cup toasted pumpkin & sunflower seeds mixed
 ½ cup cranberries
 
DRESSING:
 2 Tablespoons flavourless oil
 2 Tablespoons balsamic vinegar
 1 Tablespoon honey
 1 teaspoon grainy mustard
 Salt & pepper

DIRECTIONS:

To make the dressing, place the oil, vinegar, honey, mustard & salt & pepper in a jar.

Shake well to mix.
 
Combine the carrot, beetroot, parsley, lentils, seeds & cranberries in a large bowl.

Add the dressing and mix, letting the salad sit for 20 minutes before serving.
