RENUKA'S CURRIED APPLE SOUP

INGREDIENTS:

3 Apples
 
1 Parsnip
 
1 Potato
 
1 Onion
 
1 Tablespoon Oil
 
1 Tablespoon Butter
 
1 teaspoon Cumin seeds
 
1 teaspoon Peppercorns
 
1 teaspoon Ground coriander
 
1 teaspoon Ground turmeric
 
1 knob Ginger, about 2.5cm, finely grated
 
1 clove Garlic, finely grated
 
4 cups Chicken stock
 
1 bunch Coriander leaves
 
Lime segments, to serve
 
 
DIRECTIONS:
 
Peel & finely chop the apples, parsnip & potato.
 
Heat a heavy-based saucepan over a medium-low heat & add the butter & olive oil. 
 
Fry the cumin seeds & peppercorns until they start to splutter.
 
Stir in the coriander & turmeric then the ginger & garlic. 
 
Fry for a minute then add the vegetables & cook over a very low heat for 5 minutes.
 
Add the chicken stock, bring the boil, then cover, turn down the heat & simmer until vegetables are fork tender.
 
Leave to cool a little then blend, add salt to taste & serve with fresh coriander leaves & a squeeze of lime.
