KERRI'S CURRIED KUMARA SOUP

INGREDIENTS:

75 grams Butter

2 cloves Garlic

1 teaspoon Curry Powder

3 cups of Milk

Salt & Pepper to taste

500 grams Kumara

1 ½ cups water

2 teaspoons instant

Chicken or Vegetable stock

¼ cup of Cream(optional)

 

DIRECTIONS:

Melt butter in a large saucepan.

Add crushed garlic & curry powder.

Peel Kumara, slice 1 cm thick.

Cook in butter without browning for 2 minutes.

Add water.

Cover, then cook for 10 minutes until tender.

Stir in stock powder, then puree, thinning with milk.

 

Add the cream & reheat without boiling
