NADIA'S CAULIFLOWER FRIED 'RICE'

Okay, 'rice' is between inverted commas because there's actually none in this recipe. Instead, it's cauliflower, which replaces the rice.

I know some of you will be sceptical reading this right now
I'll admit, so was I when I first read about cauliflower 'rice',
but hey, it's pretty darn good.

You blitz the cauliflower in a food processor until it's texture resembles rice or couscous, & use it as the base of your meal,
which ends up boosting your vege content.

Try this one out, it's delicious!
 
 
INGREDIENTS:
 
½ head cauliflower, cut into florets
 

2 Tablespoons oil
 
½ cup diced streaky bacon 
 
½ red onion, diced
 
2 cloves garlic, finely chopped
 
2 spring onions, finely sliced
 
1 teaspoon thyme leaves
 
½ red chilli, deseeded, finely chopped (optional)
 
¼ cup chopped parsley
 
½ cup cashew nuts, chopped (optional)

 

INSTRUCTIONS:

Put the cauliflower florets into a food processor & blitz a few times briefly until the texture resembles that of rice.
 
Heat the oil in a wok or large frying pan on medium high heat.

Add the bacon, red onion, garlic & spring onion,& cook for 1-2 minutes.
 
Add the thyme, chilli & cauliflower rice, cook for a further 3-4 minutes, tossing frequently, until the cauliflower is very lightly cooked.
 
Finally, toss through the parsley & cashew nuts (if using).

Season to taste with salt & freshly cracked black pepper.
