GRACE’S GREEN VEGETABLE STIR-FRY WITH SESAME SEEDS

INGREDIENTS:

2 Tablespoons sesame seeds

2 Tablespoons peanut oil

1 clove garlic, roughly chopped

2.5cm piece fresh ginger, finely chopped

150 grams broccoli, cut into very small florets

2 courgettes, halved lengthways & finely sliced

170 grams snow peas

1 Tablespoon rice wine or medium-dry sherry

1 Tablespoon dark soy sauce

 

INSTRUCTIONS:

Heat a wok.

Add the sesame seeds & dry-fry for 2 minutes or until golden, shaking the pan frequently.

Remove & set aside.

Add the oil into the wok, heat for 1 minute, then add garlic & ginger.

Stir-fry over a medium heat for 1-2 minutes, until softened.

Add the broccoli & stir-fry for a further 2-3 minutes.

Add the courgettes & snow peas.

Stir-Fry for 3 minutes.

Pour over rice wine or sherry & sizzle for a minute.

Add the soy sauce then stir-fry for 2 minutes.

Sprinkle over the toasted sesame seeds just before serving.
