PETE'S LEMON PARSLEY SAUCE

Makes about 1 cup.
INGREDIENTS:
3 Tablespoons parsley
2 Tablespoons butter
2 Tablespoons flour
3/4 cup milk
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 Tablespoons lemon juice
1 Tablespoon grated lemon rind
DIRECTIONS:
Finely chop the parsley.
In a saucepan melt butter, stir in flour & cook until frothy.
Remove from heat & gradually add milk, stirring constantly.
Return to heat & cook, stirring until sauce thickens.
Add salt, pepper, lemon juice & lemon rind, then mix in the parsley.
Serve with fish.
