PETRA'S GLAZED PARSNIPS

Serves 4.

 

INGREDIENTS:

4 parsnips

boiling salted water

25 gams butter

3 Tablespoons clear honey

1 teaspoon grated lemon rind

1 teaspoon lemon juice

 

DIRECTIONS:

Peel the parsnip & cut into quarters lengthways, then cut each length in half. 

Cook in boiling salted water for 5 minutes.

Drain well & turn into an ovenware dish.

In the same saucepan, place the butter & honey.

Heat gently until melted.

Add the lemon rind & juice.

Pour over the parsnips.

Bake at 190 degrees C for 45 minutes or until glazed & tender.

Serve hot.
