SWEDE & LEMON

INGREDIENTS:

400 grams Swede, peeled & cut into bite sized chunks
1 Tablespoon brown sugar
1 Tablespoon butter
1 teaspoon grated lemon rind
2 Tablespoons lemon juice
Freshly ground black pepper
2 spring onions, thinly sliced diagonally

 

DIRECTIONS:

Place the vegetables, brown sugar, butter, rind, juice & pepper in a microwave proof dish.

Mix, cover & cook on high power for 4-6 minutes or until tender.

Stir once during cooking. Mix the herbs through the vegetables.

Garnish with the spring onions. Serves 4.
