ARYSBETH'S CALABACITAS RELLENAS

INGREDIENTS:
 
4 large courgettes
2 L water
1 bay leaf
1 sprig thyme
1 pinch salt
 
FILLING:
2 Tablespoons vegetable oil
1 teaspoon garlic, crushed
3 Tablespoons finely diced onion
2 tomatoes, chopped
2 x 185 grams cans tuna
1 cup shredded mozzarella cheese
salt and freshly ground black pepper

DIRECTIONS:

 
Cut the courgettes in half lengthwise & scoop out seeds.
 
Chop the seeds & keep aside.

Place water in a heavy based saucepan, add the bay leaf, thyme salt, bring to the boil.

Place the courgettes in the boiling water for 2-3 minutes, remove & immediately place in a bowl of iced water.

Remove & drain well.
 
To make the filling, heat oil in a heavy based frying pan over a medium heat, add courgette seeds, garlic, onion, tomatoes, tuna, mozzarella & seasoning.

Cook, stirring occasionally 
until vegetables are tender.
 
Fill the courgettes & place on a microwavable dish.

Before serving, place in the microwave & heat on high for
30-40 seconds.
