DOUG'S PUMPKIN CREAM

INGREDIENTS:


1.8kg Pumpkin
1kg Sugar - or as preferred
225 grams Butter
Juice & rind of 6 Lemons, strain the juice & finely grate the rind

 


DIRECTIONS:

Peel & chop pumpkin into large saucepan

Cover with water & bring to the boil

Simmer until tender, around 15 - 20 minutes

Strain

Puree the pumpkin & return to the large saucepan

Add the sugar, butter, lemon rind & lemon juice

Stir over a low heat until the sugar has dissolved

Then bring it to the boil & simmer for 5 minutes

Remove from the heat, cool slightly then pour into clean warm jars

Mixture may look very thin, but will ticken upon cooling

Cover & seal when cold
