VICTOR'S VEGETABLE MINESTRONE

INGREDIENTS:
         
2 Tablespoons olive oil
Large carrot
1 large onion (diced)
Swede
3-4 cloves garlic (crushed)
leek
4 cups vegetable or chicken stock
celery stalk 
2 large tomatoes (skinned and diced)
 
300 grams each of:
Spinach or sliver beet           
400 grams can cannelloni or
(washed and trimmed)
Green beans
kidney beans or similar (drained)
Salt and freshly ground black Pepper to taste
1 cup peas
 
 
DIRECTIONS:
 
Peel and slice the carrot & Swede.

Wash the leek well & chop (discard the tough green ends).  
Dice the celery.

Heat the oil in a large saucepan.  
 
Sauté the onion until softened.  
 
Add the garlic, carrot, Swede, leek & celery.  
 
Sauté, stirring until lightly coloured.
 
Add the stock & simmer for 15 minutes.
 
Chop the washed & trimmed green vegetables.  
 
Add to the soup with tomatoes, canned beans & peas.
 
Season
 
Cover & simmer for about 30 minutes.
 

Excellent served garnished with shaved Parmesan cheese & accompanied by crusty bread.
