BEN'S BANANA BREAD
Makes: 10 slices
Preparation: 15 minutes
Cooking: 50-60 minutes
INGREDIENTS:
4 bananas, mashed (approximately 1 ½ cups)
1/3 cup oil (we used canola oil)
½ cup honey or maple syrup (we used ¼ cup each)
2 eggs
¼ cup low fat milk
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
1 ¾ cup whole wheat flour
½ cup nuts or raisins (we used walnuts)
DIRECTIONS:
Heat oven to 180C
Grease a loaf tin
In a large bowl, beat the oil & honey/maple syrup.
Whisk in the eggs then mix in the banana & milk
Add the baking soda, vanilla, salt & cinnamon.
Mix until combined
Gently fold in the flour and the nuts or raisins
Pour into the prepared loaf tin & bake 50-60 minutes
or until an inserted skewer comes out clean
Cool on a wire rack
