PETER'S PUMPKIN TARTS

INGREDIENTS:

3 eggs
¼ cup milk
½-¾ cup sugar
1 teaspoon ground mixed spice
500 grams cooked pumpkin, mashed
9-12 precooked rectangle pie cases
1 Tablespoon apricot jam
1 Tablespoon boiling water
9-12 pecan nuts
 
 
DIRECTIONS:
 
Preheat oven to 180°C.
 
Beat eggs and milk together in a bowl. Add sugar and beat until dissolved. Add spice and pumpkin and mix.
 
Fill pie cases with mixture and cook in preheated oven for 20-25 minutes, or until pastry is golden and filling has set.
 
Mix apricot jam with water and sieve. Dip pecan nuts into liquid to glaze.
 
Place a pecan nut on top and serve pumpkin tarts with yoghurt.
 
 
Note: we used 10 cm x 5 cm x 2 cm deep pie cases.
