3 cooked beetroots, diced
2 handfulls of baby spinach, washed
2 spring onions, sliced
50g feta cheese, chopped
Handful of chopped walnuts or macadamia nuts
5 tbsp oil
5 tbsp honey
5 tbsp lemon juice
1 tbsp dijon mustard
Lay your spinach leaves in a bowl, top with beetroot, spring onion, feta, walnuts.
Mix all the ingredients for the dressing, add to the salad and it's ready to serve.
