MACY'S MANDARIN CAKE
INGREDIENTS:
6 Mandarins
175 grams Butter
175grams White Sugar
3 Eggs
175 grams Plain Flour
1 teaspoon Baking Powder
2 Cups Icing Sugar
DIRECTIONS:
Heat the oven to 175 C.
Grease & line the base of a 23cm cake tin.
Peel 3 mandarins & leave another 3 with the skin on.
Roughly chop them & place in a food processor.
Blitz until you have a pulp; set aside 2 Tablespoons for the icing.
Beat 175 grams butter & 175 grams white sugar until pale.
Add 3 eggs, one at a time, then stir in 175 grams of plain flour
& 1 teaspoon of baking powder, that have been sieved together.
Then add mandarin pulp.
Pour into cake tin & smooth the top.
Bake for 45 minutes or until a skewer inserted in the cake comes out clean.
Cool & remove from tin.
To make icing:
Mix 2 cups icing sugar with the reserved manderin pulp & enough hot water to create a runny consistency.
Place the cake on a serving plate & drizzle with the icing.
