RITA'S RED CABBAGE BRAISE

INGREDIENTS:

 

½ red cabbage, finely sliced

1 Tbsp canola oil

1 onion, peeled & sliced

1 cup red wine or white vinegar

2 Tbsp sugar

¼ cup sultanas

2 apples, cored & sliced

sprigs of Italian or flat leaf parsley for garnish

 

DIRECTIONS:

 

Place cabbage, oil & onion in a large heavy-based saucepan with a lid & stir fry for 3-4 minutes.

Add vinegar & sugar & stir until sugar has dissolved.

Add sultanas & apples.

Cover & simmer for 30 minutes, stirring occasionally.

Serve hot, garnished with parsley.
