RIKKY'S ROAST BABY RED POTATOES & BEETS WITH FETA

INGREDIENTS:
450 grams can whole baby beets
(or equivalent of your own cooked beets)
2 teaspoons dill seeds
1 kilo washed, not peeled, baby red potatoes
3 Tablespoons extra virgin olive oil
1 teaspoon smoked Maldon sea salt
1 Tablespoon fennel seeds
200 grams feta cheese
Fresh cracked pepper
DIRECTIONS:
Preheat your oven to 200OC.
Place the drained beets in a bowl and add dill seeds and gently toss so the beets are coated with the seeds. Leave to stand.
In a roasting dish place the washed baby red potatoes (halved if not quite baby), olive oil, smoked salt and fennel seeds.
Make sure the oil has coated the red potatoes. Bake 40 minutes.
Remove tray from oven and add the beets and crumbled feta cheese and place back in oven for another 20 minutes.
Serve in a large bowl. Enjoy.
