GREG'S GLAZED PARSNIPS

INGREDIENTS:

 

700 grams parsnips – peeled
 
25 grams of butter
 
Salt and freshly ground pepper
 
2 Tablespoons of maple syrup
 
3 Tablespoons of sesame seeds, lightly toasted
 

DIRECTIONS:

 

Preheat your oven to 220*C.

Cut parsnips in half lengthways and in half again.  
If you are using older, tougher parsnips, cut into quarters and remove the woody cores.

 
Add to a pan of boiling salted water and par boil for 2 minutes.  
Drain well.
 
Place the butter and maple syrup in a small pan or microwave and heat gently.  
 
Transfer the parsnips to a roasting dish, then brush with the maple mixture and season to taste.
 
Bake, shaking the pan frequently, for 30 minutes or until golden brown.
 
Sprinkle over the sesame seeds and return to the oven for 5 minutes.
 
Transfer to a warm serving dish and serve.
