OLGA'S ONION DIP

  • INGREDIENTS:
  • 4 onions, finely diced
  • 1 Tablespoon olive oil
  • 1 cup water
  • 2 Tablespoon white wine vinegar
  • 2 teaspoon onion powder
  • 1/3 cup light sour cream
  • 1 cup unsweetened yoghurt

    DIRECTIONS:
  • Place onion & olive oil in a heavy frying pan.
  • Heat slowly & saute very gently for approximately 1 hour, stirring often.
  • Add water to pan & bring to a very gentle simmer.
  • Simmer until all the water has evaporated.
  • The onion should be a deep, light golden colour.
  • Add onion powder & vinegar & reduce to a paste.
  • Allow to cool completely.
  • Mix onion mixture with sour cream & yoghurt.
  • Refrigerate until ready to serve.
