MARIE'S MARINATED ROAST KUMARA

INGREDIENTS:
 
3-4 medium kumara, unpeeled, sliced ½ cm thick
1-2 red or green capsicums, deseeded and cut into chunky wedges
¼ cup lemon juice
2 Tablespoons light olive oil
2 Tablespoons runny honey
Lettuce leaves to serve (optional)
 
DIRECTIONS:
 
Preheat oven to 200°C.
 
Place vegetables in a roasting pan.
 
Combine lemon juice, oil and honey.
 
Pour over vegetables and marinate for an hour if possible.
 
Bake in preheated oven for 20-25 minutes or until tender and golden brown.
 
 
Either serve as a hot dish or cool slightly and toss through lettuce leaves.
