ALICE'S ASPARAGUS FRITTATA

Serves 4-5

INGREDIENTS: 

1 Tablespoon oil

1 bunch asparagus (approx. 250 grams), sliced

1 large onion, finely chopped

2 rashers bacon, finely chopped

4 eggs

1 cup grated cheese

 

DIRECTIONS:

Heat the oil in a heavy based pan.

Saute the asparagus, onion & bacon for 4-5 minutes or until the onion is golden brown.

Place in a well greased 25cm diameter baking dish.

Beat the eggs & pour over the asparagus.

Sprinkle with the cheese.

Bake at 200°C for 20-25 minutes or until the mixture is set & golden brown. 

Serve either cold, warm or hot.
