LISA'S LEEK & POTATO SOUP

INGREDIENTS:

2 leeks, sliced
3 potatoes, peeled & chopped
2 Tablespoons olive oil
4 cups chicken stock
2 cups milk

DIRECTIONS:

Sauté the leek & potato in the oil until softened.

Add the stock & simmer gently for 15 - 20 minutes or until the vegetables are tender.

Puree if wished.

Add the milk.

Heat but do not boil.
