RIKKI'S ROASTED BEETROOT

INGREDIENTS:

3 medium sized beetroot

Dash of cinnamon

2 Tablespoons balsamic vinegar

1 orange

1 Tablespoon honey

 

DIRECTIONS:

Chop 3 beetroot coarsely (they shrink). 

Line a tray with baking paper & arrange the beetroot pieces.

Spray with a little oil & bake at approximately 180°C for about 40 minutes (test if tender) until almost done.

Sprinkle with cinnamon & balsamic vinegar.

Put back in the oven to finish baking (about 5-10 minutes, check them).

Grate orange zest & squeeze orange juice then mix juice with honey.

Place cooked beetroot in serving dish, drizzle with orange/honey & sprinkle with orange zest.
