CARLA'S CURRIED CAULIFLOWER SOUP

INGREDIENTS:

30 grams butter

1 small cauliflower (cut into florets)

OR ½ large cauliflower (cut into florets)

1 red diced capsicum

1 chopped onion

3 stalks celery sliced

1 teaspoon curry powder

3 cups chicken stock

1 Tablespoon cornflour 

(mix cornflour with the 2 cups of milk)

2 cups milk

Parsley (for garnish)

 

DIRECTIONS:

Melt 30 grams butter in a large saucepan & add cauliflower florets,  capsicum, onion & celery.

Cook over low heat for 10 minutes (do not brown).

Mix in curry powder & chicken stock.

Stir in cornflour & milk (previously mixed).

Simmer for 10 minutes or until soup thickens & veges are tender.

Garnish with parsley
