CARL'S CHICKEN VEGETABLE SOUP

INGREDIENTS:

Oil & a small knob of butter for sautéing

1 finely chopped onion

2 rashers chopped bacon with rind removed

3 cloves garlic, minced

2 – 3 ribs celery, chopped

2 large carrots, chopped

3 – 4 large Agria potatoes, peeled & chopped

8 – 10 cups Chicken stock

2 Tablespoons fresh thyme

410 grams can creamed corn

Cooked chicken

smoked chicken pieces (optional)

Salt & pepper to taste

 

DIRECTIONS:

Into a large stockpot heat a little oil & a small knob of butter, sauté the onion, bacon & garlic on low heat for a good few minutes, taking care it doesn’t catch or colour. 

Add celery, chopped carrots, potatoes, thyme. 

Stir to coat the vegetables with the butter/bacon mixture & just before it catches add chicken stock & cook with lid off till vegetables are soft. 

Turn off heat, blitz with kitchen whiz till a nice consistency, then add the creamed corn & the chicken. 

Season well & add chopped parsley & chopped smoked chicken if desired for each bowl.
