JIM'S GAZPACHO

Serves 4

This delicious cold soup can be served in glasses with a celery or cucumber swizzle stick.

INGREDIENTS:

1 red capsicum, deseeded & roughly chopped
6 large ripe tomatoes, peeled
1 small cucumber, peeled
1 small red onion, peeled & roughly chopped
1 clove garlic, peeled & finely chopped
1 cup tomato juice
2 Tablespoons olive oil
2 teaspoon sugar
Salt & freshly ground black pepper to taste

 

DIRECTIONS:

Blend all ingredients together in a food processor or blender until smooth. 

Refrigerate.

Serve cold.
