Red Slaw

Serves: 10

Preparation: 15 minutes

Cooking: none

 

INGREDIENTS:

¼ red cabbage, finely sliced
1 medium carrot, grated
½ red onion, diced
1 red capsicum, finely sliced
1 medium beetroot, grated
2 Tablespoons mint, sliced

 

Dressing

2 Tablespoons lemon juice
6 Tablespoons olive oil
1 teaspoon Dijon mustard
Salt & pepper to taste

 

DIRECTIONS:

Mix all ingredients in a large serving bowl.

Whisk the dressing ingredients & toss through the Red Slaw.

 

Tip: Use gloves when grating the beetroot to avoid staining your fingers
