NIKKI'S PARSNIPS WITH SPINACH

Serves 4


INGREDIENTS:

3 medium parsnips, cut into thin sticks

1 teaspoon coriander seeds

2 teaspoon mustard seeds 

Olive oil for spraying 

5 handfuls spinach 

8-10 small tomatoes, halved 

2-3 Tablespoons vinaigrette e.g. balsamic

 


DIRECTIONS:

Preheat oven to 200 degrees C.


Place parsnip, coriander & mustard seed on an oven tray.


Spray with olive oil.


Bake in preheated oven for 20-25 minutes.


Place spinach on a serving platter.


Add the parsnip & tomatoes.


Drizzle vinaigrette over & gently toss the salad.

 

 

Note:

Parsnip has a very sweet & nutty taste

& cooked this way brings this out.
