LARISSA'S LEMON & LIME PUD

INGREDIENTS:
75 grams Butter, softened
1 teaspoon vanilla extract
Finely grated rind of 2 lemons
Finely grated rind of 1 lime
1 1/2 cups caster sugar
3 eggs, separated
1/2 cup lemon juice
1 cup milk, warmed
3/4 cup self-raising flour
DIRECTIONS:
Preheat oven to 180 degrees C.
Grease a 1-litre baking dish.
Beat butter, vanilla, rinds & sugar until well mixed.
In a separate bowl, whip egg whites until stiff.
Mix lemon juice, milk, & flour into the butter mixture, then fold in egg whites.
Pour mixture into the prepared dish & bake for 30-40 minutes until golden & puffed
