PEGGY'S CREAMY PUMPKIN SOUP

INGREDIENTS:

1 ½ kilos of pumpkin (peeled and chopped)    

2 Onions (peeled and chopped)

2 Stalks Celery (chopped)                       

4 cups chicken stock

1 Tablespoon red or green curry paste

1 can coconut milk (400 gms)

 

DIRECTIONS:

Place the pumpkin, onion, celery, chicken stock & curry paste in a saucepan.

Simmer gently for 20-25 minutes or until the vegetables are tender.

Puree until smooth.

Add the coconut milk.

Heat gently, do not boil.

Serves 4-6.

The wonderful combination of pumpkin with the curry & coconut cream makes this soup irresistible!
