RUBY'S DATE & KUMARA SCONES

INGREDIENTS:

2 cups flour
4 teaspoons baking powder
50 grams butter
3/4 cup milk
1 cup dates, finely chopped
2 kumara, cooked & mashed with a little maple syrup

DIRECTIONS:

Sift flour & baking powder into a bowl, 
cut in the butter & mix together to form breadcrumbs.


Add mashed kumara.

Stir in enough milk to make stiff dough.

Add dates & mix together.

Place dough on a floured surface & gently press out into a slab about 3cm thick.

Cut into 18 small squares.

Bake at 220*C for 12 minutes
