MELANIE'S MAPLE KUMARA BITES

INGREDIENTS:

400 grams Small Kumara, chopped into pieces
Lightly salted water for boiling
2 rashes of bacon or as desired
Maple Syrup
Butter for frying pan

DIRECTIONS:

Put chopped Kumara into lightly salted water.
Bring to the boil.

Boil until cooked but still slightly firm to touch when poked lightly with a sharp knife.

Drain.

Put pieces of kumara in one layer in the pan.

Add a good amount of Maple Syrup & Butter & fry.

Continue the process until all the kumara is fried.

Remove all the kumara
     
Add more butter & maple syrup to the pan, *this is the "dressing". 

Add the bacon to the dressing & fry until crispy.

Drizzle fried bacon & dressing over the kumara.


Can be served immediately or placed in the fridge once cool.

Cover with tinfoil to reheat.
