GREEN'S GALORE - STIR FRY
INGREDIENTS:
1 Tablespoon oil
6 cups assorted green vegetables (e.g. quartered Brussels sprouts, roughly chopped spinach & cabbage, finely sliced leeks, green beans, pepper, celery & asparagus, broccoli florets, Asian greens)
3 Tablespoons finely chopped fresh herbs (e.g. coriander, chives, parsley, basil, marjoram, mint, dill)
2 Tablespoons lemon juice
Freshly ground black pepper
DIRECTIONS:
Heat the oil in a large pan or wok.
Add the vegetables (excluding the green leafy ones) and stir-fry for 3 - 4 minutes or until tender but still slightly crisp.
Add the green leafy vegetables (if you are using them), herbs, lemon juice & black pepper.
Stir-fry for another 1 - 2 minutes. Serve immediately.
Serves 4 - 5.
