NADIA’S CHICKEN, MUSHROOM AND LEEK FILO PIE

INGREDIENTS:
 
600-700 grams free-range boneless, skinless chicken thighs, cut into 3cm pieces

2 Tablespoons butter

1 onion, diced
 
1½ cups sliced leek
 
3 cloves garlic, chopped
 
2 cups sliced button mushrooms
 
2 Tablespoons fresh thyme leaves
 
2 Tablespoons flour
 
200 grams light or standard sour cream
 
1½-2 cups chicken stock
 
1 egg, lightly beaten
 
8 sheets of fresh filo pastry, cut to the shape of baking dish
 
2 Tablespoons melted butter
 
1 Tablespoon sesame seeds
 
½ teaspoon freshly cracked black pepper
 

DIRECTIONS:
 
Preheat the oven to 200°C.
 
Heat the butter in a large frying pan on medium heat.

Pat the chicken dry with paper towels, season with salt, brown in the pan for about 5 minutes (do not cook all the way through) & set to one side.
 
Keep the pan on the heat.
 
Add the onion & leek to the pan & cook for about 5 minutes until soft.
 
Add the garlic & mushrooms & cook for a further 2-3 minutes or until the mushrooms are soft.
 
Add the chicken, thyme & flour & stir until well mixed.
 
Add the sour cream & mix well.
 
Lastly, add the stock, mix well & bring to the boil.
 
Reduce the heat & simmer for about 10-15 minutes or until the sauce has thickened.
 
Pour the filling into a large baking dish & put in the fridge for about 15 minutes to cool (so your pastry won't steam).
 
Once cooled, brush the edges of the baking dish with a little egg.
 
Place a sheet of pre-cut filo pastry on a chopping board or clean, dry bench & lightly brush with melted butter.
 
Place another sheet on top & brush again with butter. Repeat with the remaining sheets but do not brush the last sheet with butter.
 
Carefully place the layered filo pastry on top of the filling in the baking dish.
 
Gently press the filo into the sides, brush the top with egg, sprinkle with sesame seeds & place into the oven for 20-30 minutes or until pastry is golden brown & crispy.
 
To serve, divide the pie between plates & accompany with a big green leafy salad on the side.
