BIANCA'S BEETROOT & APPLE SALAD

INGREDIENTS:


4 Beetroot, scrubbed clean
4 Granny Smith apples
2-3 Tablespoons fruit vinegar (or red wine vinegar)
6 Tablespoons good-quality olive oil
Pinch of brown sugar
Salt & Pepper, to season
1 Cup roasted almonds, roughly chopped
Parsley or coriander &/or white sesame seeds, to garnish



DIRECTIONS:

Slice the Beetroot & Apples very finely using a Mandoline

Slicer or food processor.
 

Alternatively, you can grate both for this salad, but I think the slices look more elegant on the able.

In a big bowl, make a dressing by whisking Vinegar, Oil, Sugar & Seasonings. – taste to get the flavour balance right.

Toss through your sliced Beetroot, Apple & half the Almonds, mixing to coat well.

Turn out into a bowl, then garnish with the Parsley & remaining Almonds.
