CLAIRES CHOCOLATE BEETROOT CAKE

INGREDIENTS:

4 ounces cocoa powder (or carob)

1 cup vegetable oil

2 ½ cups raw sugar

2 cups shredded beetroot

2 Tablespoons vanilla extract

2 cups rice flour

3 eggs

4 teaspoons baking powder

1 teaspoon baking soda

¼ teaspoon sea salt

 

DIRECTIONS:

Preheat oven to 190 degrees.

Place cocoa powder & oil in a double boiler until melted (or gently heat oil in microwave then mix in cocoa powder and blend together (no lumps).

Mix together dry ingredients.

Combine all ingredients, folding in beetroot.

Place batter in an oiled cake tin & bake for 60 minutes.
