KAREN'S CARAMELISED ONION & KUMARA MASH

INGREDIENTS:

1 large onion, peeled and finely chopped

2 cloves garlic, peeled and finely chopped

2 Tablespoons olive oil

4 large kumara (900 grams), peeled and cut into even-sized pieces

¼ cup lite sour cream

¼-½ cup milk

Salt and freshly ground black pepper to taste

 

DIRECTIONS:

Place onion, garlic & oil in a frying pan.

Cover and simmer on a very low heat for 25-35 minutes or until onions are succulent & caramelised.

Boil kumara in a little water for 25-35 minutes or until soft.
Drain. 

Add sour cream & milk, mash to a smooth consistency adding more milk if necessary.

Stir in onion & garlic mixture.

Add seasoning & serve.

 

Variation: Add other vegetables to the onions before adding to the mashed kumara.
