ANDREW'S APPLE SOUP

INGREDIENTS:
¼ cup olive oil or 3 tablespoons butter
3 Granny Smith apples, peeled and diced
3 large onions, peeled and diced
1 litre stock
1 litre non-alcoholic apple cider
Salt and pepper to taste
4 Tablespoons cream (optional)
DIRECTIONS:
Warm a large pot over a low heat & add olive oil.
Gently cook the apples & onions for about 30 minutes, stirring often –DO NOT BROWN.
The longer & slower you cook them the sweeter the flavour.
Remove to a blender.
Add a little of the stock, then blend the moisture until smooth.
Return the mixture to the pot & add remaining stock & cider.
Simmer on a low heat for 10 minutes, stirring often.
If you are using cream, stir it in & warm through.
Season to taste & serve with crusty white bread.
